Hot smoked ocean trout and salsa wrap or baguette

  • 1 packet Harris Smokehouse Hot Smoked Ocean Trout with Blackening Spice - click here to order online
  • 1 x 40cm wrap or baguette
  • 1/3 cup olive paste or mayonnaise
  • 2 handfuls [approx 20g] Rocket
  • 1 avocado, sliced
  • 1 truss tomato, diced
  • 1⁄4 red onion, diced
  • basil leaves, to garnish

Slice the baguette lengthways down the centre. Hollow out the baguette using your fingers. Or lay the wrap out flat.

To fill, spread the olive paste or mayonnaise over the bread, layer the rocket leaves, avocado, tomatoes, onion, break up the smoked trout with your fingers and garnish with basil leaves. Cut the baguette or wrap in half, tie each end with a paper napkin and serve.
