Hot smoked kingfish noodle salad

  • 1 packet of Harris Smokehouse Hot Smoked Kingfish - click here to order online
  • 50g rice stick noodles, roughly broken
  • Peanut oil to deep fry
  • 1 cup of bean sprouts, ends trimmed
  • 1 Lebanese cucumber, halved lengthways, deseeded and thinly sliced, diagonally
  • 2 green shallots, ends trimmed and cut into matchsticks
  • 1 large red chilli, deseeded and sliced thinly lengthways
  • 1 cup fresh coriander
  • Salt and ground black pepper to taste
  • Lime wedges to serve

For the dressing

  • 2 tbs fish sauce
  • 2 tbs fresh lime juice
  • 1 tbs sweet chilli sauce
  • 1 small garlic clove, crushed
  • 1 tsp of finely grated ginger

Add oil to a saucepan. Using a high heat, deep-fry half the noodles until puffed [around 1 minute]. Line a plate with paper towel and transfer puffed noodles. Repeat process with the left over noodles. Be sure to reheat oil between batches.

Combine all the dressing ingredients in a small bowl and whisk until combined.

Add the salad ingredients and dressing to a bowl and toss. Divide the noodles evenly among the plates. Top with the salad and the Kingfish. Serve with lime wedges.
