Add oil to a saucepan. Using a high heat, deep-fry half the noodles until puffed [around 1 minute]. Line a plate with paper towel and transfer puffed noodles. Repeat process with the left over noodles. Be sure to reheat oil between batches.
Combine all the dressing ingredients in a small bowl and whisk until combined.
Add the salad ingredients and dressing to a bowl and toss. Divide the noodles evenly among the plates. Top with the salad and the Kingfish. Serve with lime wedges.
